Grilled Portabella Burger
Ingredients:
2 round GF rolls/baps
1 clove of garlic
1 tablespoons of extra virgin olive oil
2 Portabella mushroom caps, wiped down with a damp towel
2 oz. of goat cheese
1/2 red onion sliced thick
1/2 cup of jarred roasted red peppers
A couple of handfuls of arugula
2 tbsp. of balsamic vinegar
2 tsp. of oregano
Salt and pepper to taste
Method:
Season both sides of the mushrooms and onions with extra virgin olive oil, balsamic vinegar, oregano, salt and pepper.
Heat grill pan over medium high heat.
Place the mushrooms and onions on the pan and grill for three to five minutes on each side or until the veggies are tender.
In the meantime,pop the GF rolls/baps under the broiler for two minutes
(watch them closely they toast fast!).
Remove toasted GF rolls/baps and rub generously with garlic clove.
On the bottom half of the GF roll/bap, layer arugula, onions, mushrooms, peppers and another handful of arugula.
On the top half of the GF roll/bap spread the goat cheese.
Pop the top on and enjoy!!
Serves 2.
